PHI is the 21st letter of the Ancient Greek alphabet and symbolises balance, harmony and proportion. In a similar way, the third and fourth generations of the De Bortoli family are working together to create considered Single Vineyard wine that gives proportion to climate, soil and maker.

Winemaker Notes

VINEYARD
Lusatia Park was purchased outright by the De Bortoli family in 2016. Prior to that, the vineyard had been a source of some of our finest Chardonnay for 20 years. One of the most well known and respected vineyards in the upper reaches of the Yarra Valley.

SEASON
Mild dry growing season, timely spring rain, slow ripening, terrific flavour development. An outstanding Chardonnay year with perfume, violets and crunch.

TASTING NOTE
Restrained nose, mineral, citrus, white flowers. Fine and textural, a touch of savoury, nutty, oatmeal and gentle acidity.

WINEMAKING
The fruit is hand harvested, whole bunch pressed and allowed to settle overnight. The turbid juice is then racked to older French oak casks where it undergoes natural fermentation. The wine is left on yeast lees for 9 months with the occasional stirring.

Winemaker Notes

VINEYARD
Freemans Bridge Block 9 Shiraz was planted in 2004. This site has very unique profile with a shallow horizon of deep red Cambrian soil over a substantial layer of near pure limestone. The vines are naturally low cropping and have very soil driven characteristics. No other block that we cultivate or purchase from has this distinctiveness.

SEASON
The fruit was hand picked on the 19th February which is about normal. 2018 was arguably one of the best growing seasons of the last 5 years with mild ripening temperatures and timely rainfall.

TASTING NOTE
Dark colour with brightness and nerve. Dense, bright, deeply scented dark fruits, grilling notes, violets. Ripe blueberry, wild herb, fine tannin, lots of flesh, silken feel.

WINEMAKING
Hand picked, 74% destemmed, 26% whole bunch, single batch of Syrah. Judicious plunging and turnovers. Matured in 500L French oak casks for 7 months.
